A flavorful and easy one-pan chicken bake with paprika and garlic, perfect for meal prep with roasted vegetables.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large red onion, sliced
  • 1 pound baby potatoes, halved
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, smoked paprika, minced garlic, oregano, black pepper, and salt to form a paste.
  3. Place chicken breasts, bell peppers, onion, and potatoes in a large baking dish. Rub the paprika-garlic paste evenly over the chicken and vegetables.
  4. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  5. Remove from oven, garnish with fresh parsley, and let cool slightly before dividing into meal prep containers.
