For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons smoked paprika
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large red onion, sliced
- 1 pound baby potatoes, halved
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a small bowl, mix olive oil, smoked paprika, minced garlic, oregano, black pepper, and salt to form a paste.
- Place chicken breasts, bell peppers, onion, and potatoes in a large baking dish. Rub the paprika-garlic paste evenly over the chicken and vegetables.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Remove from oven, garnish with fresh parsley, and let cool slightly before dividing into meal prep containers.
