For the Crust:

- 1 small onion, diced
- 3 cloves garlic, minced
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 4 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1/4 cup vegetable broth or water
- Lemon wedges for serving
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant. Stir in chickpeas, oregano, red pepper flakes, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Pour in vegetable broth and add fresh spinach. Cook until spinach wilts, about 3 minutes.
- Sprinkle grated Parmesan cheese over the mixture and stir until melted and creamy. Remove from heat.
