For the Crust:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 4 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup vegetable broth or water
  • Lemon wedges for serving

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant. Stir in chickpeas, oregano, red pepper flakes, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  3. Pour in vegetable broth and add fresh spinach. Cook until spinach wilts, about 3 minutes.
  4. Sprinkle grated Parmesan cheese over the mixture and stir until melted and creamy. Remove from heat.
  5. Serve warm with lemon wedges on the side for a bright finish.
