A creamy, one-pan pasta dish loaded with sautéed mushrooms, fresh spinach, and savory Parmesan cheese.

For the Crust:
- 8 oz penne pasta
- 2 tbsp olive oil
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the penne pasta according to package directions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
- Add minced garlic and cook for 1 minute until fragrant. Stir in spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese and Italian seasoning until smooth.
- Add cooked pasta to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
- Serve immediately, garnished with extra Parmesan if desired.
