For the Crust:
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add orzo to the skillet and toast for 2-3 minutes, stirring frequently, until lightly golden.
- Pour in vegetable broth and bring to a simmer. Cook for 8-10 minutes, stirring occasionally, until orzo is tender and liquid is absorbed.
- Stir in fresh spinach and cook for 2-3 minutes until wilted.
- Reduce heat to low, add heavy cream and Parmesan cheese, stirring until creamy and well combined. Season with salt, pepper, and red pepper flakes if using. Serve immediately.
