For the Crust:
- 2 medium zucchinis, sliced
- 2 large tomatoes, sliced
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
- Arrange alternating slices of zucchini and tomatoes in the baking dish. Sprinkle with minced garlic, salt, pepper, oregano, and basil.
- In a bowl, mix breadcrumbs and Parmesan cheese. Sprinkle evenly over the vegetables.
- Drizzle olive oil over the top. Bake for 25-30 minutes, until vegetables are tender and topping is golden brown.
- Garnish with fresh parsley and serve warm.
