For the Crust:
- 1 sheet puff pastry, thawed
- 8 oz mascarpone cheese
- 1 tsp vanilla extract
- 2 tbsp powdered sugar
- 3 ripe peaches, sliced
- 1/2 cup granulated sugar
- 2 tbsp water
- 2 tbsp heavy cream
- 1 tbsp unsalted butter
- Pinch of salt
- Edible gold flakes for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Roll out puff pastry on a baking sheet lined with parchment paper, prick with a fork, and bake for 15-20 minutes until golden and flaky. Let cool completely.
- In a bowl, mix mascarpone, vanilla extract, and powdered sugar until smooth. Spread evenly over the cooled pastry base.
- Arrange peach slices in a single layer over the mascarpone mixture.
- For the caramel gloss, combine granulated sugar and water in a saucepan over medium heat. Cook without stirring until amber-colored, about 5-7 minutes. Remove from heat, carefully stir in heavy cream, butter, and salt until smooth. Let cool slightly.
- Drizzle caramel over the peaches. Garnish with edible gold flakes if desired. Slice and serve immediately or chill for up to 2 hours.
