For the Crust:

  • 2 ripe pears, thinly sliced
  • 1 apple, thinly sliced
  • 1/2 cup dried cranberries
  • 4 cups mixed greens (e.g., arugula, spinach)
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese (for snowflakes)
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine mixed greens, pear slices, apple slices, dried cranberries, and chopped walnuts.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper to make the vinaigrette.
  3. Drizzle the vinaigrette over the salad and toss gently to coat.
  4. Using a small snowflake-shaped cookie cutter, press feta cheese into snowflake shapes (or simply crumble if preferred).
  5. Arrange the feta snowflakes on top of the salad and serve immediately.
