A festive and vibrant salad combining sweet seasonal fruits, tangy cranberries, and crispy pan-fried halloumi cheese, all tossed in a zesty honey-lemon dressing. Perfect for holiday gatherings.

For the Crust:
- 2 ripe pears, cored and thinly sliced
- 1 large apple, cored and thinly sliced
- 1/2 cup dried cranberries
- 200g halloumi cheese, sliced
- 4 cups mixed salad greens (e.g., arugula, spinach)
- 1/4 cup toasted walnuts or pecans
- 2 tablespoons olive oil
- For the dressing: 3 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon honey, salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together the dressing ingredients (olive oil, lemon juice, honey, salt, and pepper) until well combined. Set aside.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the halloumi slices and cook for 2-3 minutes per side until golden brown and crispy. Remove from heat and set aside.
- In a large salad bowl, combine the mixed greens, sliced pears, sliced apple, dried cranberries, and toasted nuts. Drizzle with the prepared dressing and toss gently to coat.
- Arrange the salad on a serving platter or individual plates. Top with the warm halloumi slices. Serve immediately and enjoy.
