Description

A festive and vibrant salad combining sweet seasonal fruits, tangy cranberries, and crispy pan-fried halloumi cheese, all tossed in a zesty honey-lemon dressing. Perfect for holiday gatherings.

For the Crust:

  • 2 ripe pears, cored and thinly sliced
  • 1 large apple, cored and thinly sliced
  • 1/2 cup dried cranberries
  • 200g halloumi cheese, sliced
  • 4 cups mixed salad greens (e.g., arugula, spinach)
  • 1/4 cup toasted walnuts or pecans
  • 2 tablespoons olive oil
  • For the dressing: 3 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon honey, salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together the dressing ingredients (olive oil, lemon juice, honey, salt, and pepper) until well combined. Set aside.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the halloumi slices and cook for 2-3 minutes per side until golden brown and crispy. Remove from heat and set aside.
  3. In a large salad bowl, combine the mixed greens, sliced pears, sliced apple, dried cranberries, and toasted nuts. Drizzle with the prepared dressing and toss gently to coat.
  4. Arrange the salad on a serving platter or individual plates. Top with the warm halloumi slices. Serve immediately and enjoy.
