For the Crust:
- 2 medium sweet potatoes, peeled and cubed
- 1 ripe pear, thinly sliced
- 1 apple, thinly sliced
- 1 can (15 oz) chickpeas, rinsed and drained
- 1/2 cup dried cranberries
- 4 cups mixed greens
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh mint, chopped
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper, then roast for 25-30 minutes until tender.
- In a large bowl, combine mixed greens, sliced pear, sliced apple, chickpeas, and dried cranberries.
- For the dressing, whisk together Greek yogurt, chopped mint, honey, lemon juice, salt, and pepper until smooth.
- Add roasted sweet potatoes to the salad bowl, drizzle with mint yogurt dressing, and toss gently to combine.
- Serve immediately, garnished with extra mint if desired.
