For the Crust:

  • 1 medium butternut squash, peeled and cut into 1-inch cubes
  • 1 cup pecans, finely chopped
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup pure maple syrup
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix chopped pecans, breadcrumbs, smoked paprika, garlic powder, salt, and pepper.
  3. Toss butternut squash cubes in olive oil, then coat evenly with the pecan mixture.
  4. Arrange coated squash cubes on the baking sheet in a single layer. Bake for 25-30 minutes until golden and tender.
  5. Warm maple syrup slightly in a small saucepan or microwave. Drizzle over baked squash cubes before serving.
  6. Garnish with fresh thyme leaves and serve warm.
