Description

This Pineapple Cranberry Cheese Log is a sweet and savory holiday appetizer made with creamy cheese, crushed pineapple, tart cranberries, and crunchy pecans. Perfect for Thanksgiving, Christmas, or festive gatherings.


Ingredients

16 oz cream cheese, softened

1 cup crushed pineapple, well drained

1/2 cup dried cranberries, finely chopped

1/2 cup shredded sharp cheddar cheese

1/4 cup finely chopped green onions

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 cup chopped pecans (for coating)

Fresh parsley or extra cranberries for garnish (optional)

Crackers or sliced baguette, for serving


Instructions

1. In a large mixing bowl, beat softened cream cheese until smooth and creamy.

2. Fold in well-drained crushed pineapple, chopped cranberries, shredded cheddar, green onions, garlic powder, salt, and pepper until fully combined.

3. Place the mixture onto a sheet of plastic wrap and shape into a log using your hands.

4. Wrap tightly and refrigerate for at least 2 hours, or until firm.

5. Spread chopped pecans evenly on a plate. Unwrap the chilled cheese log and roll it in pecans to coat completely.

6. Transfer to a serving platter and garnish with fresh parsley or extra cranberries if desired.

7. Serve with crackers, crostini, or sliced baguette.

Notes

Make sure pineapple is thoroughly drained to prevent a soft cheese log.

You can prepare this up to 2 days in advance and store refrigerated.

Swap pecans for walnuts if preferred.

For extra sweetness, add 1–2 tablespoons honey.

Store leftovers tightly wrapped in the refrigerator for up to 4 days.
