For the Crust:
- 8 oz cream cheese, softened
- 1/2 cup crushed pineapple, drained
- 1/4 cup dried cranberries, chopped
- 1/4 cup chopped pecans
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 cup chopped parsley for garnish
Instructions
1. Prepare the Crust:
- In a medium bowl, beat the softened cream cheese until smooth.
- Add crushed pineapple, dried cranberries, honey, vanilla extract, and cinnamon. Mix until well combined.
- Shape the mixture into a log on a sheet of plastic wrap, then roll in chopped pecans and parsley until fully coated.
- Wrap tightly in plastic wrap and refrigerate for at least 2 hours before serving.
