For the Crust:
- 200g pasta of your choice
- 1 ripe avocado
- 1/2 cup pistachios
- 2 cups fresh basil leaves
- 2 cloves garlic
- 1/4 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- 2 tablespoons spicy chili crisp or chili oil
Instructions
1. Prepare the Crust:
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a food processor, blend together avocado, pistachios, basil, garlic, Parmesan cheese, olive oil, and lemon juice until smooth. Season with salt and pepper.
- Toss the cooked pasta with the avocado pesto until well coated. Serve with a drizzle of spicy chili crisp on top.
