Description

A playful twist on the classic — where warmth meets icy elegance. Golden, nutty pistachio pairs with tart lemon for a refreshing dessert.


Ingredients

For the Crust:

  • 1 cup shelled pistachios
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 cup heavy cream
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 3 egg yolks
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Toast pistachios in a dry pan over medium heat until fragrant, then blend into a fine powder.
  2. In a saucepan, combine sugar and water, heat until sugar dissolves to make a syrup. Whisk in egg yolks and cook until thickened.
  3. Fold in pistachio powder, lemon juice, zest, and vanilla. Chill mixture for 2 hours.
  4. Whip heavy cream to stiff peaks, then gently fold into the chilled pistachio-lemon mixture.
  5. Pour into a loaf pan, cover, and freeze for at least 4 hours or until firm. Serve sliced.
