For the Crust:
- 1 cup shelled pistachios
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 cup heavy cream
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 3 egg yolks
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Toast pistachios in a dry pan over medium heat until fragrant, then blend into a fine powder.
- In a saucepan, combine sugar and water, heat until sugar dissolves to make a syrup. Whisk in egg yolks and cook until thickened.
- Fold in pistachio powder, lemon juice, zest, and vanilla. Chill mixture for 2 hours.
- Whip heavy cream to stiff peaks, then gently fold into the chilled pistachio-lemon mixture.
- Pour into a loaf pan, cover, and freeze for at least 4 hours or until firm. Serve sliced.
