Elegant, no-bake cheesecake domes with a creamy pistachio flavor and a surprise raspberry center, perfect for special occasions.


Ingredients

For the Crust:

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup heavy cream, whipped
  • 1/2 cup pistachio paste
  • 1 tsp vanilla extract
  • 1/2 cup fresh raspberries
  • 1/4 cup raspberry jam
  • Chopped pistachios for garnish

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs with melted butter and press into dome molds to form bases.
  2. Beat cream cheese and powdered sugar until smooth, then fold in whipped cream, pistachio paste, and vanilla.
  3. Place a spoonful of cheesecake mixture into each mold, add a raspberry and a dab of jam, then top with more mixture.
  4. Freeze for at least 4 hours until firm, then unmold and garnish with chopped pistachios before serving.
