For the Crust:
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/2 cup pistachio paste
- 1/4 cup powdered sugar
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a saucepan, bring water and butter to a boil. Add flour and salt, stirring until a smooth dough forms.
- Remove from heat and let cool slightly. Beat in eggs one at a time until dough is glossy.
- Fold in pistachio paste until evenly distributed. Pipe dough onto baking sheet in small mounds.
- Bake for 25-30 minutes until golden and puffed. Let cool completely.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form. Fill puffs with cream.
