For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup dried cranberries, chopped
- 1/2 cup shelled pistachios, chopped
- 1 egg white, lightly beaten
- Coarse sugar for sprinkling
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
- Gradually mix in flour and salt until just combined. Fold in cranberries and pistachios.
- Roll dough into 1-inch balls, then shape each into a ring with a hole in the center to form a wreath.
- Brush wreaths with egg white and sprinkle with coarse sugar. Bake for 12-15 minutes until edges are golden.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
