Description

Festive, buttery cookies shaped like wreaths and studded with crunchy pistachios and tart cranberries.


Ingredients

For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup shelled pistachios, chopped
  • 1 egg white, lightly beaten
  • Coarse sugar for sprinkling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. Gradually mix in flour and salt until just combined. Fold in cranberries and pistachios.
  4. Roll dough into 1-inch balls, then shape each into a ring with a hole in the center to form a wreath.
  5. Brush wreaths with egg white and sprinkle with coarse sugar. Bake for 12-15 minutes until edges are golden.
  6. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
