For the Crust:
- 1 (8 oz) wheel of brie cheese
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup panko breadcrumbs
- 1 large egg, beaten
- 2 tbsp honey
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- Cooking spray or olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Cut the brie wheel into 1-inch cubes, removing any excess rind if desired.
- In a shallow bowl, combine chopped pistachios, panko breadcrumbs, thyme, salt, and pepper.
- Dip each brie cube into the beaten egg, then roll in the pistachio mixture to coat evenly.
- Place coated brie bites on the prepared baking sheet and lightly spray with cooking oil.
- Bake for 10-12 minutes, until the crust is golden and cheese is soft but not melted through.
- Drizzle with honey and serve warm.
