For the Crust:

  • 1 (8 oz) wheel of brie cheese, chilled
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup panko breadcrumbs
  • 1 large egg, beaten
  • 1/2 cup raspberry preserves
  • 2 tablespoons honey
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

1. Prepare the Crust:

  1. Cut the chilled brie into 1-inch cubes, ensuring each piece has rind on at least one side.
  2. In a shallow bowl, mix chopped pistachios, panko breadcrumbs, salt, and pepper.
  3. Dip each brie cube into the beaten egg, then coat thoroughly in the pistachio mixture.
  4. Heat olive oil in a skillet over medium heat. Fry brie bites for 1-2 minutes per side until golden and crust is crisp.
  5. In a small saucepan, combine raspberry preserves, honey, and water. Heat over low, stirring until smooth and warmed through.
  6. Arrange brie bites on a serving platter and drizzle generously with the raspberry honey glaze. Serve immediately.
