For the Crust:
- 1 (8 oz) wheel of Brie cheese, chilled
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 1/2 cup fig jam
- 1 tbsp balsamic vinegar
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- Crackers or sliced baguette for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Slice the chilled Brie into 1/2-inch thick rounds. In a shallow dish, mix chopped pistachios, breadcrumbs, salt, and pepper.
- Dip each Brie round into the beaten egg, then coat evenly with the pistachio mixture. Place on the prepared baking sheet.
- Bake for 10-12 minutes, or until the crust is golden and the cheese is soft but not melted through.
- Meanwhile, in a small saucepan, warm the fig jam with balsamic vinegar over low heat, stirring until smooth.
- Arrange baked Brie rounds on a serving platter, drizzle with the fig jam glaze, and sprinkle with fresh thyme. Serve immediately with crackers or baguette slices.
