Description

Tender salmon cubes coated in a crunchy pistachio crust, baked until golden, and finished with a sweet maple drizzle for an elegant appetizer or light main.

Ingredients

Scale

For the Crust:

  • 1 lb salmon fillet, skinless, cut into 1-inch cubes
  • 1 cup shelled pistachios, finely chopped
  • 1/4 cup panko breadcrumbs
  • 1 egg, beaten
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup pure maple syrup
  • 1 tbsp lemon juice
  • Fresh parsley, chopped for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix chopped pistachios, panko, garlic powder, smoked paprika, salt, and pepper.
  3. In another bowl, whisk egg and Dijon mustard. Dip each salmon cube into the egg mixture, then roll in the pistachio mixture to coat evenly.
  4. Place coated salmon bites on the baking sheet. Drizzle with olive oil. Bake for 12-15 minutes until golden and salmon flakes easily.
  5. While baking, warm maple syrup and lemon juice in a small saucepan over low heat until combined.
  6. Serve salmon bites warm, drizzled with maple mixture and garnished with parsley.
