For the Crust:

  • 1 sheet puff pastry (thawed)
  • 4 oz goat cheese (softened)
  • 2 tbsp honey (plus extra for drizzling)
  • 1/4 cup shelled pistachios (chopped)
  • 1 tsp fresh thyme leaves
  • 1 egg (beaten, for egg wash)
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry into a rectangle. Spread the softened goat cheese evenly over the pastry, leaving a small border around the edges.
  3. Drizzle honey over the goat cheese, then sprinkle chopped pistachios, thyme, and a pinch of salt.
  4. Starting from one long edge, tightly roll the pastry into a log. Slice into 1-inch thick pinwheels and place them on the prepared baking sheet.
  5. Brush the tops with egg wash. Bake for 18-20 minutes or until golden brown and puffed.
  6. Drizzle with additional honey before serving warm or at room temperature.

Notes

You can customize the seasonings to taste.
