For the Crust:
- 1 cup white chocolate chips
- 1 1/2 cups heavy cream, divided
- 1/4 cup shelled pistachios, finely ground
- 1 tsp vanilla extract
- 2 tbsp powdered sugar
- Pinch of salt
- Additional crushed pistachios for garnish
Instructions
1. Prepare the Crust:
- Melt white chocolate with 1/2 cup heavy cream in a double boiler, stirring until smooth. Remove from heat and stir in ground pistachios and vanilla. Let cool to room temperature.
- In a separate bowl, whip the remaining 1 cup heavy cream with powdered sugar and salt until stiff peaks form.
- Gently fold the whipped cream into the cooled chocolate mixture until fully combined and no streaks remain.
- Spoon or pipe the mousse into serving cups and refrigerate for at least 2 hours until set. Garnish with crushed pistachios before serving.
