A dramatic dessert with a pitch-black dark chocolate shell, a molten black sesame lava core, and a creamy vanilla ice cream topping dusted with matcha powder.

For the Crust:
- 4 oz high-quality dark chocolate (70% or higher), chopped
- 1/2 cup unsalted butter
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 2 tbsp all-purpose flour
- 1/4 cup black sesame paste
- 1 tsp vanilla extract
- Vanilla ice cream, for serving
- 1 tsp matcha powder, for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Grease four 6-ounce ramekins and place on a baking sheet.
- Melt dark chocolate and butter in a double boiler or microwave, stirring until smooth. Let cool slightly.
- In a bowl, whisk eggs, egg yolks, and sugar until pale and thick. Fold in the melted chocolate mixture, then sift in flour and mix until just combined.
- Divide half the batter among the ramekins. Spoon 1 tablespoon of black sesame paste into the center of each, then cover with the remaining batter.
- Bake for 12-14 minutes until edges are set but centers are soft. Let rest for 1 minute, then invert onto plates.
- Top each cake with a scoop of vanilla ice cream and dust generously with matcha powder. Serve immediately.
