Description

A dramatic dessert with a pitch-black dark chocolate shell, a molten black sesame lava core, and a creamy vanilla ice cream topping dusted with matcha powder.

For the Crust:

  • 4 oz high-quality dark chocolate (70% or higher), chopped
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/4 cup black sesame paste
  • 1 tsp vanilla extract
  • Vanilla ice cream, for serving
  • 1 tsp matcha powder, for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Grease four 6-ounce ramekins and place on a baking sheet.
  2. Melt dark chocolate and butter in a double boiler or microwave, stirring until smooth. Let cool slightly.
  3. In a bowl, whisk eggs, egg yolks, and sugar until pale and thick. Fold in the melted chocolate mixture, then sift in flour and mix until just combined.
  4. Divide half the batter among the ramekins. Spoon 1 tablespoon of black sesame paste into the center of each, then cover with the remaining batter.
  5. Bake for 12-14 minutes until edges are set but centers are soft. Let rest for 1 minute, then invert onto plates.
  6. Top each cake with a scoop of vanilla ice cream and dust generously with matcha powder. Serve immediately.
