Description

A low-carb, protein-packed pizza with a surprisingly delicious cottage cheese-based crust that’s crispy on the outside and tender inside.

For the Crust:

  • 2 cups cottage cheese
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup almond flour
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese for topping
  • Your favorite pizza toppings (e.g., pepperoni, bell peppers, mushrooms)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a blender or food processor, combine cottage cheese, eggs, 1 cup mozzarella, Parmesan, almond flour, Italian seasoning, garlic powder, salt, and pepper. Blend until smooth.
  3. Spread the mixture onto the prepared baking sheet into a 12-inch circle or rectangle, about 1/4-inch thick.
  4. Bake for 20-25 minutes until the crust is golden and firm to the touch.
  5. Remove from oven and spread pizza sauce evenly over the crust. Top with remaining mozzarella and your favorite toppings.
  6. Return to oven and bake for another 8-10 minutes until cheese is melted and bubbly.
  7. Let cool for 5 minutes before slicing and serving.

Notes

You can customize the seasonings to taste.
