For the Crust:
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 8 oz halloumi cheese, sliced
- 1 cup pomegranate seeds
- 1 cucumber, diced
- 1/4 cup fresh mint leaves, chopped
- 1 cup Greek yogurt
- 2 tbsp olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook the couscous according to package instructions using vegetable broth, then fluff with a fork and set aside.
- Heat olive oil in a pan over medium heat and cook halloumi slices for 2-3 minutes per side until golden brown.
- In a small bowl, mix Greek yogurt, chopped mint, lemon juice, salt, and pepper to make the mint yogurt sauce.
- Assemble bowls by dividing couscous, halloumi, cucumber, and pomegranate seeds among four bowls.
- Drizzle with mint yogurt sauce and garnish with extra mint leaves before serving.
