For the Crust:
- 1 sheet puff pastry, thawed
- 8 oz brie cheese, rind removed and cut into 1-inch cubes
- 1/4 cup pomegranate arils
- 1/4 cup shelled pistachios, roughly chopped
- 2 tbsp honey
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut puff pastry into 2-inch squares and place on the baking sheet. Top each square with a cube of brie.
- Bake for 12-15 minutes, until pastry is golden and cheese is melted.
- Remove from oven and top each bite with pomegranate arils, pistachios, a drizzle of honey, and a sprinkle of thyme, salt, and pepper. Serve warm.
