For the Crust:
- 6 cups mixed salad greens (such as arugula, spinach, and romaine)
- 1 cup pomegranate seeds
- 8 oz halloumi cheese, cut into 1/2-inch cubes
- 1/4 cup olive oil, divided
- 1/4 cup fresh orange juice
- 2 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- 1/4 cup sliced almonds, toasted
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together orange juice, apple cider vinegar, honey, cumin, smoked paprika, 2 tbsp olive oil, salt, and pepper to make the vinaigrette. Set aside.
- Heat remaining 2 tbsp olive oil in a skillet over medium heat. Add halloumi cubes and cook for 2-3 minutes per side until golden brown and crispy. Remove from heat and drain on paper towels.
- In a large salad bowl, combine mixed greens, pomegranate seeds, and toasted almonds.
- Drizzle the spiced orange vinaigrette over the salad and toss gently to coat.
- Top the salad with the warm halloumi croutons and serve immediately.
