A vibrant and flavorful salad featuring fresh greens, sweet pomegranate seeds, crispy halloumi croutons, and a zesty spiced orange vinaigrette.

For the Crust:

  • 6 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 1 cup pomegranate seeds
  • 8 oz halloumi cheese, cut into 1/2-inch cubes
  • 1/4 cup olive oil, divided
  • 1/4 cup fresh orange juice
  • 2 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup sliced almonds, toasted

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together orange juice, apple cider vinegar, honey, cumin, smoked paprika, 2 tbsp olive oil, salt, and pepper to make the vinaigrette. Set aside.
  2. Heat remaining 2 tbsp olive oil in a skillet over medium heat. Add halloumi cubes and cook for 2-3 minutes per side until golden brown and crispy. Remove from heat and drain on paper towels.
  3. In a large salad bowl, combine mixed greens, pomegranate seeds, and toasted almonds.
  4. Drizzle the spiced orange vinaigrette over the salad and toss gently to coat.
  5. Top the salad with the warm halloumi croutons and serve immediately.

Notes

You can customize the seasonings to taste.
