For the Crust:
- 6 cups mixed salad greens
- 1 cup pomegranate seeds
- 8 oz halloumi cheese, cubed
- 2 tbsp olive oil
- 1/4 cup orange juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/4 tsp ground cumin
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- 1/4 cup sliced almonds, toasted
Instructions
1. Prepare the Crust:
- In a large bowl, combine the mixed greens and pomegranate seeds.
- Heat olive oil in a skillet over medium heat. Add halloumi cubes and cook until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
- In a small bowl, whisk together orange juice, honey, Dijon mustard, cumin, smoked paprika, salt, and pepper to make the vinaigrette.
- Toss the greens and pomegranate seeds with the vinaigrette until evenly coated.
- Top the salad with the halloumi croutons and toasted almonds. Serve immediately.
