For the Crust:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup quinoa, cooked
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
Instructions
1. Prepare the Crust:
- Season chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear for 6-7 minutes per side until cooked through. Let rest, then slice.
- Cook quinoa according to package instructions and let cool slightly.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and cilantro. Toss with lime juice.
- Divide the quinoa mixture into serving bowls. Top with sliced chicken and avocado.
- Drizzle with additional lime juice or a light dressing if desired, and serve immediately.
