These delightful mini tartlets combine a spiced graham cracker crust with a creamy pumpkin and cream cheese filling, topped with a dollop of whipped cream for an elegant, cozy treat.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup canned pumpkin puree
  • 1/4 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar
  • Whipped cream for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Mix graham cracker crumbs, granulated sugar, and melted butter. Press into mini tart pans and bake for 8 minutes. Cool completely.
  2. Beat cream cheese until smooth. Add pumpkin, brown sugar, pumpkin pie spice, and vanilla. Mix until well combined.
  3. In a separate bowl, whip heavy cream with powdered sugar until stiff peaks form. Fold into pumpkin mixture. Spoon into cooled crusts and chill for at least 2 hours. Top with whipped cream before serving.
