For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup canned pumpkin puree
- 1/4 cup brown sugar
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 2 tbsp powdered sugar
- Whipped cream for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Mix graham cracker crumbs, granulated sugar, and melted butter. Press into mini tart pans and bake for 8 minutes. Cool completely.
- Beat cream cheese until smooth. Add pumpkin, brown sugar, pumpkin pie spice, and vanilla. Mix until well combined.
- In a separate bowl, whip heavy cream with powdered sugar until stiff peaks form. Fold into pumpkin mixture. Spoon into cooled crusts and chill for at least 2 hours. Top with whipped cream before serving.
