For the Crust:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
- 1/2 cup canned pumpkin puree
- 4 ounces cream cheese, softened
- 2 cups powdered sugar
- 1/2 teaspoon pumpkin pie spice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Beat in egg, vanilla, and pumpkin puree.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, ginger, and salt. Gradually mix into the wet ingredients.
- Stir in oats until well combined. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes, until edges are lightly golden. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the filling, beat cream cheese until smooth. Gradually add powdered sugar and pumpkin pie spice, beating until creamy.
- Spread or pipe filling onto the flat side of half the cookies, then top with remaining cookies to form sandwiches.
