For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 cups cottage cheese, blended smooth
  • 1/4 cup honey
  • 1/4 cup fresh basil leaves, finely chopped
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon gelatin powder
  • 2 tablespoons cold water

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs with melted butter and press firmly into a tart pan. Chill for 15 minutes.
  2. Blend cottage cheese until smooth, then stir in honey, chopped basil, and vanilla extract. Spread evenly over the crust and refrigerate for 1 hour.
  3. In a saucepan, combine blueberries, sugar, water, and lemon juice. Simmer for 10 minutes until blueberries break down. Strain through a sieve to remove solids.
  4. Sprinkle gelatin over 2 tablespoons cold water, let bloom for 5 minutes, then dissolve into the warm blueberry syrup. Cool slightly.
  5. Pour the blueberry glaze over the chilled tart, tilting to coat evenly. Refrigerate for at least 2 hours until set before serving.

Notes

You can customize the seasonings to taste.
