For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 2 cups cottage cheese, blended smooth
- 1/4 cup honey
- 1/4 cup fresh basil leaves, finely chopped
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1/2 cup sugar
- 1/4 cup water
- 1 tablespoon lemon juice
- 1 teaspoon gelatin powder
- 2 tablespoons cold water
Instructions
1. Prepare the Crust:
- Mix graham cracker crumbs with melted butter and press firmly into a tart pan. Chill for 15 minutes.
- Blend cottage cheese until smooth, then stir in honey, chopped basil, and vanilla extract. Spread evenly over the crust and refrigerate for 1 hour.
- In a saucepan, combine blueberries, sugar, water, and lemon juice. Simmer for 10 minutes until blueberries break down. Strain through a sieve to remove solids.
- Sprinkle gelatin over 2 tablespoons cold water, let bloom for 5 minutes, then dissolve into the warm blueberry syrup. Cool slightly.
- Pour the blueberry glaze over the chilled tart, tilting to coat evenly. Refrigerate for at least 2 hours until set before serving.
