A fast and flavorful stir-fry with tender chicken, crisp broccoli, and savory mushrooms in a simple soy-ginger sauce.

For the Crust:
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 cups broccoli florets
- 1 cup sliced mushrooms (such as cremini or shiitake)
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 1/4 cup chicken broth
- 1 tsp cornstarch mixed with 2 tbsp water
- Salt and pepper to taste
- Cooked rice for serving
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large wok or skillet over high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove and set aside.
- In the same pan, add broccoli and mushrooms. Stir-fry for 4-5 minutes until slightly tender. Add garlic and ginger, cooking for 1 minute until fragrant.
- Return chicken to the pan. Add soy sauce, oyster sauce, sesame oil, and chicken broth. Stir to combine and bring to a simmer.
- Stir in cornstarch slurry and cook for 1-2 minutes until sauce thickens. Season with salt and pepper. Serve hot over cooked rice.
