For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg, beaten
  • 2 cloves garlic, minced
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cranberry sauce
  • 1/4 cup ketchup
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper. Mix until just combined.
  3. Shape mixture into 1-inch meatballs and place on the prepared baking sheet. Bake for 18-20 minutes, until cooked through.
  4. While meatballs bake, whisk together cranberry sauce, ketchup, soy sauce, and apple cider vinegar in a saucepan over medium heat. Simmer for 5 minutes, stirring occasionally.
  5. Toss baked meatballs in the cranberry glaze until evenly coated. Serve warm.

Notes

You can customize the seasonings to taste.
