For the Crust:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup shredded carrots
- 1/4 cup ranch dressing
- 1/4 cup croutons
Instructions
1. Prepare the Crust:
- Season chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
- Grill chicken over medium heat for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
- Top the salad with sliced grilled chicken and drizzle with ranch dressing.
- Garnish with croutons and serve immediately.
