For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup ranch dressing
  • 1/4 cup croutons

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  2. Grill chicken over medium heat for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
  4. Top the salad with sliced grilled chicken and drizzle with ranch dressing.
  5. Garnish with croutons and serve immediately.
