Description

A vibrant and fresh pasta dish featuring cheese ravioli tossed with sautéed asparagus, cherry tomatoes, garlic, and a medley of herbs.

For the Crust:

  • 1 package (20 oz) cheese ravioli
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving

Instructions

1. Prepare the Crust:

  1. Bring a large pot of salted water to a boil and cook the ravioli according to package directions. Drain and set aside.
  2. While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add asparagus and sauté for 4-5 minutes until tender-crisp.
  3. Add cherry tomatoes and garlic to the skillet and cook for another 2-3 minutes until tomatoes soften.
  4. Toss the cooked ravioli into the skillet with the vegetables. Stir in basil, oregano, salt, and pepper until well combined.
  5. Serve immediately, topped with grated Parmesan cheese.

Notes

You can customize the seasonings to taste.
