Description

A crisp and colorful salad combining sweet apples, tart cranberries, and fresh carrots, tossed in a light citrus dressing.

For the Crust:

  • 2 medium apples, cored and diced
  • 2 large carrots, grated
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the diced apples, grated carrots, dried cranberries, and chopped walnuts.
  2. In a small bowl, whisk together the lemon juice, honey, ground cinnamon, and salt until well combined.
  3. Pour the dressing over the apple and carrot mixture and toss gently to coat everything evenly.
  4. Chill in the refrigerator for at least 10 minutes before serving to allow the flavors to meld.
