For the Crust:

  • 2 large apples, cored and diced
  • 2 cups shredded carrots
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the diced apples, shredded carrots, dried cranberries, and chopped walnuts.
  2. In a small bowl, whisk together the lemon juice, honey, cinnamon, and salt until well combined.
  3. Pour the dressing over the apple-carrot mixture and toss gently to coat all ingredients evenly.
  4. Refrigerate for at least 15 minutes before serving to allow flavors to meld.
