A comforting casserole that layers the classic flavors of a Reuben sandwich—tender corned beef, tangy sauerkraut, and melted Swiss cheese—all baked to golden perfection.

For the Crust:

  • 1 pound corned beef, thinly sliced
  • 1 (16-ounce) jar sauerkraut, drained and rinsed
  • 8 slices Swiss cheese
  • 1 cup Thousand Island dressing
  • 1/2 cup rye breadcrumbs
  • 2 tablespoons butter, melted
  • 1 teaspoon caraway seeds

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Layer half the corned beef in the bottom of the dish, followed by half the sauerkraut, half the Swiss cheese, and half the Thousand Island dressing. Repeat layers.
  3. In a small bowl, mix rye breadcrumbs with melted butter and caraway seeds. Sprinkle evenly over the top layer.
  4. Bake for 25–30 minutes, or until bubbly and the topping is golden brown. Let stand 5 minutes before serving.
