A creamy, tangy, and crunchy appetizer featuring fresh ricotta topped with a vibrant olive-almond mixture and bright lemon zest.

For the Crust:

  • 1 cup whole-milk ricotta cheese
  • 1/2 cup pitted green olives, roughly chopped
  • 1/4 cup roasted almonds, coarsely chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Fresh herbs (such as parsley or basil) for garnish

Instructions

1. Prepare the Crust:

  1. Place the ricotta in a serving bowl and spread it evenly with the back of a spoon.
  2. In a separate bowl, combine the chopped olives, almonds, olive oil, lemon zest, lemon juice, and red pepper flakes. Mix well.
  3. Spoon the olive-almond mixture over the ricotta, spreading it gently to cover the surface.
  4. Season with a pinch of salt and black pepper to taste.
  5. Garnish with fresh herbs and an extra drizzle of olive oil if desired.
  6. Serve immediately with toasted bread or crackers.
