For the Crust:

  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/2 cup sugar
  • 1/3 cup olive oil
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a large bowl, mix the ricotta cheese, eggs, and sugar until smooth.
  3. Stir in the olive oil, lemon zest, and lemon juice until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly into the prepared muffin pan and bake for 15-20 minutes, or until a toothpick inserted comes out clean.
