Delicate homemade ravioli filled with creamy ricotta and bright lemon zest, served with sweet burst cherry tomatoes and creamy burrata cheese.

For the Crust:
- 1 cup ricotta cheese
- 1 lemon, zested
- 1 egg
- 2 cups all-purpose flour
- 1/4 cup water
- 2 cups cherry tomatoes
- 2 cloves garlic, minced
- 1 ball burrata cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- In a bowl, mix ricotta, lemon zest, salt, and pepper to make the filling.
- Combine flour, egg, and water to form a dough; roll out thinly and cut into squares.
- Place a spoonful of filling on half the squares, cover with remaining squares, and seal edges.
- Heat olive oil in a pan, add garlic and tomatoes; cook until tomatoes burst.
- Boil ravioli for 2-3 minutes until they float; drain and toss with tomato sauce.
- Top with torn burrata and fresh basil before serving.
