Elegant, earthy, and perfectly sweet-savory, these jewel-toned stacks feature roasted beets, tangy blue cheese, and a drizzle of balsamic glaze.

For the Crust:

  • 4 medium beets, peeled and sliced into 1/4-inch rounds
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 4 oz crumbled blue cheese
  • 1/4 cup toasted walnuts, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp balsamic glaze
  • Mixed greens for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss beet slices with olive oil, salt, and pepper, then arrange in a single layer on a baking sheet.
  2. Roast for 25-30 minutes, until tender and slightly caramelized. Let cool slightly.
  3. On serving plates, layer beet slices, alternating with blue cheese crumbles and walnuts. Drizzle with balsamic glaze, garnish with parsley, and serve over mixed greens.
