For the Crust:
- 3 medium beets, roasted and peeled
- 1 ripe pear, thinly sliced
- 4 oz blue cheese, crumbled
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1 tbsp olive oil
- Fresh arugula for serving
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Wrap beets in foil and roast for 45-60 minutes until tender. Let cool, then peel and slice into rounds.
- In a small saucepan, combine balsamic vinegar and honey. Simmer until reduced to a syrupy glaze, about 10 minutes.
- Layer beet slices, pear slices, and blue cheese in stacks on a plate. Drizzle with balsamic glaze and olive oil.
- Season with salt and pepper, and serve over a bed of fresh arugula.
