- 3 medium beets, peeled and sliced into rounds
- 1 large pear, thinly sliced
- 4 oz blue cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp balsamic glaze
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- Mixed greens for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss beet rounds with olive oil, salt, and pepper, then roast for 25-30 minutes until tender.
- Allow beets to cool slightly. On a serving plate, layer a beet round, a few pear slices, and a sprinkle of blue cheese. Repeat to form a tower.
- Drizzle with balsamic glaze and garnish with fresh thyme. Serve over a bed of mixed greens.
