Elegant, layered stacks of roasted beets, creamy blue cheese, and sweet pear slices, drizzled with a rich balsamic glaze.

For the Crust:

  • 3 medium beets, roasted and peeled
  • 1 ripe pear, thinly sliced
  • 4 oz blue cheese, crumbled
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • Mixed greens for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Wrap beets in foil and roast until tender, about 45-60 minutes. Let cool, then peel and slice into 1/4-inch rounds.
  2. In a small saucepan, simmer balsamic vinegar and honey until reduced by half and syrupy, about 5-7 minutes. Set aside to cool.
  3. On a serving plate, layer beet slices, pear slices, and blue cheese, repeating to form small towers.
  4. Drizzle towers with olive oil and balsamic glaze, then sprinkle with thyme, salt, and pepper.
  5. Serve immediately over a bed of mixed greens.
