Elegant, layered stacks of roasted beets, creamy blue cheese, and sweet pear slices, drizzled with a rich balsamic glaze.


Ingredients

For the Crust:

  • 3 medium beets, peeled and sliced into 1/4-inch rounds
  • 1 ripe pear, thinly sliced
  • 4 oz blue cheese, crumbled
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh arugula for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Toss beet slices with olive oil, salt, and pepper. Roast on a baking sheet for 25-30 minutes until tender. Let cool.
  2. In a small saucepan, combine balsamic vinegar and honey. Simmer over medium heat until reduced by half and syrupy, about 8-10 minutes. Set aside to cool.
  3. On serving plates, layer roasted beet slices, pear slices, and blue cheese crumbles into towers. Drizzle with balsamic glaze and serve over a bed of arugula.
