Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss cubed beets with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 25-30 minutes until tender, then let cool.
- On a large serving platter, arrange the mixed greens in a circular wreath shape, leaving a hollow center.
- Top the greens with the roasted beets, blue cheese, candied pecans, and dried cranberries, distributing evenly around the wreath.
