For the Crust:
- 1 sheet puff pastry, thawed
- 3 medium beets, peeled and diced
- 1 tbsp olive oil
- 4 oz goat cheese, crumbled
- 1 tbsp fresh thyme leaves
- 1 tbsp honey
- Salt and black pepper to taste
- 1 egg, beaten (for egg wash)
- 2 tbsp chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss diced beets with olive oil, salt, and pepper, then roast on a baking sheet for 20-25 minutes until tender.
- Roll out puff pastry on a parchment-lined baking sheet. Score a 1-inch border around the edges with a knife.
- Brush the pastry border with egg wash. Spread roasted beets evenly inside the border, then top with crumbled goat cheese and thyme.
- Bake for 15-20 minutes until pastry is golden and puffed. Drizzle with honey and sprinkle walnuts (if using) before serving.
